Hey family!!! In today's video Titus and the gang are working on a farm helping with the Spring Round up, we're making some old-fashioned coconut pudding, and it's the last night of family pick suppers and Jake throws a surprise on us by picking Spaghetti!

Old Fashioned Coconut Pudding
Ingredients:
4 tablespoons all-purpose flour
1 1/2 cups sugar
pinch salt
3 egg yolks
3 cups milk
1/2 teaspoon vanilla extract
about 1 teaspoon coconut extract, I used just a little less than a teaspoon
1 box vanilla wafers approximately 45 wafers
coconut flakes, toasted if you want to
For the whipped cream:
1 cup heavy whipping cream
2 tablespoons sugar
a drop of coconut extract

Directions:
Preheat oven to 350º F.
Combine flour, sugar and salt in a large, heavy saucepan.

Lightly beat egg yolks and combine with milk in a large bowl or measuring cup. Pour the egg and milk mixture into dry ingredients in heavy saucepan. Cook over low to medium heat, stirring constantly, until ingredients are thickened and smooth. Add the vanilla and coconut extracts. Remove from heat.

To make the whipped cream:
Add the heavy cream, sugar, and coconut extract to mixer and whip until desired thickness.

Begin by placing vanilla wafers on the bottom of a 2 quart oven-safe glass bowl or baking dish.
Pour 1/2 of custard/pudding over wafers.
Add the toasted coconut.
Repeat layering process until all wafers and custard have been used.
Top with the whipped cream and more toasted coconut.
